This colorful salad makes a hearty meal in under 15 minutes. The avocado chipotle dressing is so creamy and flavorful it’s hard to believe the whole thing is vegan and gluten-free.
I love salads with southwest flavors and creamy, spicy dressing – Southwest Salad, BBQ Chicken Salad, Tostadas – if they’re on the menu there’s a good shot I’m ordering it. Of course, they’re usually also covered in cheese and that creamy dressing is probably loaded with calories. This healthy salad is the answer: simple, refreshing ingredients that are as pretty to look at as they are delicious.
Add more or less chipotle depending on your love of and tolerance for the heat.
Ingredients
- 1 head romaine, rinsed, dried, and outer leaves removed
- 1 c canned no-salt-added black beans, drained and rinsed
- 2 c frozen corn
- 1 yellow bell pepper, diced
- 1 c grape tomatoes, halved
- 1/4 c red onion, diced
- 1/4 c cilantro, chopped
- 1 avocado, diced
- Dressing
- 1/4 avocado
- 1 chipotle pepper, or to taste
- 1/4 c olive oil
- 1 tbs red wine vinegar
- juice of 1 lime
- 1 tsp sugar
- salt and pepper, to taste
Instructions
Combine dressing ingredients in a food processor or blender and blend until smooth. Set aside.
In a large bowl, combine salad ingredients. Serve with dressing on the side.
